A staple ingredient used in Malayali cuisine, Kodumpuli is basically a souring agent used to add a tangy touch to rasam, curries and fish delicacies. This naturally growing fruit looks like a pale greenish-yellow coloured pumpkin. However, this Tamarind ripens for two-three months to become fit for consumption. The process of curing, not just changes the colour, but also gives the Tamarind a distinctive taste and flavour.
Apart from being a souring agent for delicious dishes, Kodumpuli is well-known for offering multiple health benefits. The rinds of this fruit are dried and used for cooking. It is also used as a remedy for stomach ailments and improves overall immunity.
Kodumpuli is naturally loaded with the goodness of amino acids, fatty acids and Hydroxycitric acid (HCA) among others. In fact, the presence of the HCA in this Tamarind has anti-inflammatory properties, which helps in suppressing appetite. The Hydroxycitric acid helps in preventing an enzyme called citrate lyase from transforming sugar into fats. Take a bowl, soak a piece of Kodumpuli overnight with water.
Take a pan, add water along with soaked Kodumpuli. Then add some tulsi leaves, cloves, fennel powder and jaggery/sugar.
