Andhra style roast chicken is one such delicacy which has a unique taste as compared to other roast chicken recipes. This chicken recipe can be a great option for evening snacks with a steaming cup of tea or dinner with rice and your favorite vegetables.

Ingredients:
500 grams chicken
7-8 curry leaves
1 inch cinnamon
1 tablespoon of lemon juice
1/2 teaspoon black pepper
1 tablespoon of ghee
1/4 teaspoon fennel seed
3-4 green chillies (sliced)
2 medium onion (sliced)
10 cashew nuts
1/4 teaspoon turmeric
1 tablespoon ginger garlic paste
1 tsp red chilli powder
2 tbsp curd
Coriander leaves
Preparation:
First you need to marinate the chicken with salt, 1/2 tsp red chilli powder, ginger and garlic paste, turmeric and curd and set aside for an hour.
Now cut the onions into slices. Also chop the coriander leaves and squeeze lemon juice into a separate bowl. Then crush the cashews and cinnamon into powder form and keep them aside.
Once chicken is marinated, heat ghee in a large wok, fry onions over low heat until onion is translucent.
Now add marinated chicken to the wok and fry until the chicken becomes tender and juicy.
Meanwhile, heat oil in another pan, heat oil and fry green chillies, fennel and curry leaves.
Now add this tadka to the chicken wok together with cashew nut powder, cinnamon powder, black pepper, 1/2 tsp red chilli powder and possibly salt to taste.
Now fry the chicken for a while. Keep stirring for about 5 minutes. Finally, add chopped coriander leaves and lemon juice.
Serve the chicken warm with roti or naan and rice.
