Dahi Bhindi
Rajasthani Dahi Bhindi is a popular dish. It is easy to make and takes about 30 minutes to prepare. Bhindi is known to contain several essential elements that help control blood pressure. Use as little oil as possible when making this dish.
Dahi bhindi is a simple curry recipe prepared with curd which gives the smooth and silky texture to the curry. Bhindi or Okra absorbs the spicy curd and becomes juicy.
Okras are low in calories and rich in vitamins, calcium and magnesium, making them a healthy lunch/dinner option.

Necessities:
Ingredients:
- 2 tablespoons of oil
- 1 cup bhindi (okra)
- 1 onion, chopped
- 1 teaspoon of salt
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1 teaspoon coriander powder
- 1 teaspoon cumin powder
- 1 cup of curd
- 2 tablespoons of ghee
- 1 teaspoon mustard seed
- 1 tsp urid dal
- 10-12 curry leaves
- 2 green peppers
Preparation:
- Make a cup full of bhindi and put it in a hot pan with some oil for sautéing.
- After the bhindi, take the onion in a hot frying pan and fry it until golden brown.
- Now add the bhindi to this along with salt, turmeric powder, red chilli powder, coriander powder and cumin powder.
- Mix all the ingredients well and then add the curd. Mix the curd well.
Prepare Tadka:
- Pour some ghee into the pan, add mustard seeds, urid dal, curry leaves and green chillies.
- Fry the ingredients thoroughly.
- Pour the tadka over the curry and mix well.
- Serve hot.
