Explanation of ingredients

Cumin: gives a nut and peppery flavor to dishes. To be used in curry or chili.
Coriander: the leaves have a lemony flavor, while the seeds have a slightly sweet, aniseed flavor.
Garlic: has a distinctive flavor and can be used in many dishes.
Fennel: aids digestion and gives fresh breath. Fennel tea is used for coughing.
Clove: gives a herbaceous and spicy flavor to dishes.
Cardamom: herbaceous plant of the ginger family. It has a pungent aroma and a sweet taste with a hint of lemon, camphor and bergamot. The green variant provides spice and freshness. The black variety is suitable for more powerful dishes such as curries and stews.
Ginger: has an intense sharp taste. Can be used in, for example, desserts, bread or biscuits. In India it is widely used with fish.
Cinnamon: can be used in both spicy and sweet dishes due to its wonderfully warm and sweet taste.
Mace: the seed coat that surrounds the nutmeg. Can be used in sweet desserts (rice pudding) or with fish, soups and sauces.

Preparation of Pav Bhaji Masala

  1. Take 5 teaspoons of oil and 30 grams of salted butter in a pan.
  2. Add 2 medium (100 grams) chopped onions, 2 large (125 grams) chopped peppers and sauté for 2 minutes.
  3. Add 2 teaspoons of Aachi Ginger Garlic Paste.
  4. Release the flavor of ginger.
  5. Add 5 large (250 grams) chopped tomatoes, fry until oozing oil.
  6. Add 3 tablespoons of Aachi Pav Bhaji Masala and fry for 1 minute.
  7. Add 250 grams of cooked mashed potatoes and 1 cup (125 grams) of frozen peas.
  8. Bake the mixture for 1 minute.
  9. Add 150 milliliters of warm water.
  10. Let it boil for 2 minutes.
  11. Add salt to taste.
  12. Add salted butter, chopped onion and lemon juice and serve hot with buttered buns / pavs.
