Chinese cabbage, how could it be otherwise, originates from northern China. But nowadays the most delicious Chinese cabbage is grown in Dutch greenhouses. Chinese cabbage has remarkably broad white veins, just like bok choy.
Characteristic of Chinese cabbage is that this leafy vegetable lacks the pronounced cabbage taste. The closer to the center of the crop, the more tender the leaves are.

Chinese cabbage tastes great in Oriental, but also in European dishes. Because of its crunchy and slightly sweet taste, Chinese cabbage also often goes well with children.
Especially the extra tender middle leaves are excellent to enjoy raw and the taste is very mild and slightly sweet; the typical cabbage flavor is actually missing completely.
The texture is nice and crispy and fresh, provided you don't cook it too long. That is why it is an excellent vegetable for stir-fries, but also as a basis for salads, for example.
